WINE AND FOOD

 

The wine

The characteristic geographical configuration of Offida Territory and the neighbouring communes castled on the crest of the broad strip of hills which divide the Tronto river from the Tesino river, has determined the production of excellent wines whose quality is improving thanks to analysis and expedients that did not exist in the past. A new DOC (Controlled Denomination of Origin) wine, named Offida, has recently been approved; it’s got to be added to the former and well- known three DOC wines.

 

1. Rosso Piceno

Production Area: The largest in the Marches. It includes the provinces of Ancona (up to Senigallia), Macerata and Ascoli Piceno.

Main features:

Colour: rather deep ruby- red;

odour: characteristic, delicate;

flavour: harmonious, relatively dry.

Minimum alcohol level: 11,5%

 

2. Rosso Piceno Superiore

Production Area: It extends over a small area southwest of the last stretch of the Tronto river.

Main features:

Colour: ruby- red, tending to garnet when aging;

odour: complex, ethereal;

flavour: sapid, harmonious, relatively dry.

Minimum alcohol level: 12%.

 

3. Falerio dei Colli Ascolani

Production area: It extends over the hill territory of the province of Ascoli Piceno.

Main features:

Colour: tenuous straw-yellow;

odour: slightly perfumed;

flavour: dry, sapid, harmonious, slightly acidulous.

 

4. Offida

A new DOC wine.

Production area: It extends over the hills of the province of Ascoli Piceno, from the Aso river up to the Tronto river. The varieties of Offida Pecorino and Passerina belong to 22 communes. The Offida Rosso variety is produced in 17 communes. “Vin Santo”, on the contrary, is produced only in the territories of Offida and Ripatransone. It includes: OFFIDA PECORINO, OFFIDA PASSERINA, OFFIDA PASSERINA SPUMANTE,OFFIDA PASSERINA PASSITO AND VIN SANTO, OFFIDA ROSSO.

 

Typical flavours

 

Chichì Ripieno

A very savoury and tasty “focaccia” (kind of flat bread) stuffed with tuna, anchovies, artichokes and peppers. Excellent as a snack or with appetizers and typical hors d’oeuvre dishes.

 

Funghetti

A very simple sweet pastry made of water, sugar, flour and anise. So called because of their shape of small mushrooms.

 

Typical dishes

 

Li Taccù.

A very simple dish, very common over the last century. A kind of rather big thin noodles mixed without eggs, but only with water and flour. You can cook them in various ways: in broth with onions and bacon lightly fried in oil or dry and flavoured with tomato sauce.

 

Ncipp Nciapp chicken

A very simple and tasty chicken-stew browned in a frying pan and flavoured with garlic and rosemary.

 

Rabbit in sauce

A very tasty rabbit-stew, flavoured with peppers, anchovies, parsley, capers, olives and artichokes sauce.
